That depends on your definition of "better”.

I'd avoid Thalys for this journey and use the reservation-free intercity trains. They run every hour.

Hola! De Ámsterdam a Brujas no hay trenes directos, así que hay dos rutas: Ir de Ámsterdam directo a Bruselas (Brussel-Centraal/Bruxelles-Central o Bruxelles-Midi/Brussel-Zuid) y cambiar ahí a un tren directo a Brujas, o ir a Amberes (Antwerpen-Centraal), cambiar ahí a un tren a Gante (Gent-St Pieters) y en Gante coger un tercer tren a Brujas.

La ruta con dos cambios (3 trenes) es algo más rápida, pero incluye un cambio relativamente corto en Gante y el tener que hacer un transbordo adicional puede ser desagradable con el equipaje.

Para el trayecto internacional (de Ámsterdam a Amberes o Bruselas) de hecho también tienes otra elección: usar el tren Thalys de alta velocidad (€22 de gastos de reserva de plaza obligatoria) o el tren Intercity normal que dura más o menos 30-45 minutos más y no requiere reserva de asiento. Personalmente, no creo que valga la pena usar el tren de alta velocidad puesto que con el intercity tienes la flexibilidad de coger cualquier tren del día que te convenga. Para encontrar el intercity en la app de eurail, tienes que filtrar en el buscador para seleccionar solo trenes sin reserva obligatoria.

Si vas en el intercity y optas por seguir a Bruselas, puede que sea mejor hacer el transbordo en Bruselas-Central puesto que ahí las distancias andando para el transbordo son menores (solo hay 6 vías, contra 19 en Midi/Zuid). Eso sí, el transbordo ahí es un poco más justo (solo 8 minutos).

Indeed, avoid Thalys. Too expensive with the pass. Inflexible and often fully booked too.

There are direct hourly trains from Antwerp (both Central and Berchem) to Bruges. The final destination of that train is Oostende.

I recommend that you switch trains in Antwerp Central to enjoy the stunningly beautiful architecture of the station, well worth a bit of your time if you come from Amsterdam. 

In Antwerp it’s displayed as: “Gent-Sint-Pieters Oostende” on the platform board. Platform is usually on the highest level of the station. Direct departure to Bruges is about +/- hh:06 in Antwerp-Central.

Indeed, even though unfortunate that's just before the arrival from The Netherlands (at hh:16), switching in Antwerp might always be a better idea - either to the direct connection 50 minutes later or to the earlier one with a switch in Ghent.
