If I need to do personal stuff abroad other than tourism, is it ok to use interrail for that? Is it permited to repeatedly do the same journey?

Sure you can. Interrail is just a ticket like any other, used it a couple of times for work myself too.
Als long as you register every train in the app, you can do whatever journey wise.
