do i have do write the date of my return to my homecountry on the pass before i start the journey or can i do that like one day before my actual return?

No, you should not enter any information regarding travel days on a paper pass in advance as you cannot change the information once you have entered it. The advice is to enter the information just before you board the train.
This is especially important if you have a flexi pass as you can loose travel days if you have entered a journey on a day and your plans change so that you don't travel on that day.
