I want to book a compartment with DB, I can see that a compartment is available to book so that’s fine, but we are only 5 people and there are 6 seats.
Is there any way of reserving more seats than people?

Just make a reservation for 6 persons at bahn.com Use the option "Seat only".
Yes it is possible, but a reserved seat is valid only with a person that seat on it. After 15 minutes if there no one seats, everyone is allowed to seat on that seat.
Thus learn the age-old tricks-that noone nowadays seem to remember anymore: make it as stinky as possible so that on others will try to enter after the first sniff.
