I am travelling from spiez to milan and then to Florence on May 29. From spiez to Milan I have taken 08.05 EC 51. Please suggest which train to take from Milan to Florence trainitalio or italo? How much gap we should take between the two train change based on EC51 reaching milan on time. Thank you.

Reservations on Trenitalia can be made very late - up to 5 minutes before departure I think. And they rarely sell out.
So I would wait until you are on the EC, and know if it's running on time or not, before making a reservation for the Florence train from your phone.
The official connection is onto the 1110 Frecciarossa, which is very comfortable if you're on time.
Italo is not included in Interrail/Eurail. Trenitalia (Frecciarossa) is.
I would allow at least 30 min as it's a regularly delayed route...
