I want to book trains from Sofia in December on the app or online but it seems that after December, 10th there is no train. Is there as logical reason for it or is it an informatic problem ? Does someone have the same problem ?

The rail planner app and the Interrail website are only updated every few weeks. They're not reliable and should therefore not be used to plan.
It's best to use national websites or apps; for international planning, the DB website or DB Navigator app is a good choice.

And anyway-IF that train happens to be about the only existing INTERNat link-to IST, you cannot do it online but only when there. NO worries-there will be space in off-season.
For the rest trains IN BG only have optional RES and even that will not work often.
