Why can´t I find any train from Salzbourg or Viena to Florence or Rome?

Where did you look and for which date?
Here https://www.interrail.eu/en/book-reservations#/
For example August, 20 or 21.
But apparently it’s not available for any other date
You are too early for Italian trains in August.
If you are looking for the direct nighttrain. That one won’t be running this summer to Florence and Rome. It will run until Bologna (as usual) and then be diverted to Ancona…
Timetables for other trains (with changes) will be available from some point in May.

On trenitalia.com some trains for the summer timetable are published, but most trains are still missing.
