I have booked my return trip from Amsterdam to London on Eurostar but now want to change the travel date to later by 2 days.   is the only way to do this by contacting Interail by email.  or is there another method?  

In theory-yes, thats it

In practice youll have no chance for the coming weeks-all booked solid-they will only even contemplate it when there are indeed free pass-seats on the other trains available.
