I have a 7 day one country pass for France 2nd class and I started my travel today but the ICE in Germany was delayed and I missed my tgv.
All of the next tgvs were fully booked for pass holders. Since I need to be in Paris the next day I had to book a first class ticket, which was sadly very expensive.
I was wondering if there's any chance to get some money back?

In an ideal situation you should speak to staff onboard the delayed train to get a proof of delay or at the latest at the arrival station. They should give you there a new reservation free of charge on the next available train, whether in 1st or 2nd class.
I guess since you bought a new ticket it's too late. You could contact DB or Interrail customer service but I'm not sure if they're required to do anything : https://eurail.zendesk.com/hc/en-001/requests/new
