I booked seats from London to Paris and paid for the seat reservation. I would like to change the time we leave. Do I make this change on the app,or do I need to login to Eurail.com? Is this even possible to do with my Eurail Pass?

Should be possible here: Eurostar.com: Book Europe Train Tickets and Holidays (“Manage booking”).
But there needs to be an interrail quota left for the train you’d like to change to.
And AFAIK it comes with a fee (15-20 €).

Yes on eurostar.com under manage booking, 15€ fee per person.
Passholder seats must still be available and the departure/arrival stations must remain the same.
The rail planner app can't ook any reservations and therefore can't change any reservations either.
Eurostar reservations from/to London can always be changed on the Eurostar website, regardless of where you originally booked them. The fee is €15 in 2nd and €20 in 1st class.
