My friend and I are travelling through Czech Republic, Poland, Austria, Hungary, Croatia and Germany with a Global Pass from 19th July until the 9th of August. We can’t seem to figure out how we are supposed to book our trains. We’re afraid that all the trains are already full. Is it necessary to book our train in advance or can we just wing it and make a reservation on the spot?

They're very likely not full (except night trains perhaps). On the other hand some reservations are not available on interrail.eu (or they're too expensive).
