I am trying to use the reservation tool on the eurail website.  I am not able to make a reservation for any high speed train from Rome to Italy on 6/30/22.  There is only one option that shows up which is an overnight local train with a transfer.

Italian railways have just published their summer timetable, valid from 12 June (for now only long distance trains) and it takes some time before other systems have it too. But there's no rush; it's only in 3 months’ time. Updates are usually on Friday and Tuesday, so try again later.

The best way to book Italian day trains is via ÖBB using these steps. Eurail charge a 2€ booking fee per seat but ÖBB don’t. But here also you have to wait until the summer timetable has arrived.
