Italian trains In August

Hello! 
I’ve been keeping an eye trying to book trains in Italy mid-to-late August! 
Every search I do seems to turn up no results! I appreciate it’s a popular time so I’ve been keeping an eye out for months now.
I’m now concerned that the trains are fully booked! Given my searches are turning up available results in September (where they weren’t before)

any advice on what to do/how to reserve would be appreciated.

Most italian trains for August aren't just not in the international planners yet.

But many of them are already published at https://www.trenitalia.com/ (not possible to book passholder reservations there).

So you're just too early. A route like Roma to Milano doesn't sell out a long time ago. So no need to worry. Normally you do even get reservations on the day of departure.
