I am making my reservations from London to Amsterdam, do I need to make two reservations one to Bruxelles-Midi and one to the final destination to Amsterdam Central?

If you are travelling direct to Amsterdam on a single train then you book that.
If you are being offered a connection at Brussels then you will be given 2 reservations for 2 different trains.
It is also possible to just book Eurostar to Brussels and take a slower non-reservation train from there to Amsterdam, these run every hour and have no additional fee.
