I am trying to get to Paris from the Netherlands. Would I need to buy a global pass for just a one way trip to Paris from the Netherlands?

No.
Passes are normally only worth while for people making multiple journeys.
For trains Amsterdam - Rotterdam - Paris search for your dates on https://www.thalys.com/de/en the operator of the only direct connection.
If you're starting from another station than Amsterdam Centraal, Schiphol Airport or Rotterdam Centraal, it's best to book on https://www.nsinternational.com/
You will then get tickets for your complete journey, wich is sometimes cheaper than buying them separately.
