Hello,

My partner and I have planned our trip via interrail for next week and we have therefore been able to make our reservations for our journeys which include trains with seats and others without.

We received the tickets for the trains with seats. However, we expected to receive a ticket for the trains without, which we did not. Is this normal, please, or have we missed something?

For example, we have a planned journey from Paris to Amsterdam with a stopover in Brussels, for which we received a Paris - Brussels ticket, but not a Brussels - Amsterdam ticket.

You're confusing tickets and reservations.

Your pass is your ticket. If you don't have reservations, then that's all you need.

If you're using the hourly intercity train from Brussels to Amsterdam (from 15/12: Eurocity Direct), then reservations are not available and you travel with your pass only.
