Hello, I am in Norway and I would like to check/book tickets for today and tomorrow. But there is no office open and even the assistance by phone it is "ooo" (it is available only from Monday to Friday).
What can I do?
If I catch a train without reservation, can I try to reserve directly on the train? Are there fines?

Speak to staff on the train otherwise I'd say
I’ve dealt with chat on entur.no over weekends and late at night so that should work as thibcabe suggests.
They will book trains, advise on availability, etc . . . no problem.
