I purchased a senior 1st class global pass. When I planned my trip from Zurich Airport to Grindelwald, the trip from Zurich Airport to Interlaken Ost is covered, but the train from Interlaken Ost to Grindelwald is not included in the pass, which I can still add it to my trip. Can I pay and buy the ticket from Interlaken Ost to Grindelwald at the Frankfurt Flughafen station or should I buy it only after arriving at Interlaken Ost?

You get a 25% discount with Eurail for the leg Interlaken Ost - Grindelwald (discount also valid in the whole region). The discounted ticket cannot be bought online.
Frankfurt Airport will not be able to sell it. Zurich Airport SBB ticket counters might be able to but I’m not certain. Interlaken Ost definitely will
