I want to travel from Stockholm to Hamburg on the 17.03.2023 and there are no reservations available. Not on the Interrail website or the sj website.
Does this mean the train is sold out?

Maybe. Please specify which train(s), with departure time(s).

Plenty of availability though on the day trains, with a change in CPH (and sometimes Fredericia). You should split up your reservation: 1 time Stockholm to Copenhagen via sj.se, one time Copenhagen to Hamburg via DSB Udland (prices in DKK, not SEK).
The Euronight is sold out (not uncommon for a Friday):
