How to travel CDG to Strasbourg by train. Do we catch train in CDG or do we take a RER to Paris center? What is the name of our departure train station? Should we buy tickets in advance?

There are direct trains (between about 9am to 7pm) from the airport to Strasbourg that take about 2 hours. It's of course much faster and easier and more comfortable than heading to Paris and change trains.
Name of the station is Aéroport Charles de Gaulle 2 TGV.
If you don't hold a railpass and would like to buy a ticket (as you did write) it's always (much) cheaper to buy in advance: https://www.sncf-connect.com/en-en/train-ticket
If you are holding a rail pass, then you'd need a mandatory reservation, not a ticket.
