my buddy and I want to go on vacation in France for 3 travel days with the Interrail ticket. We want to take our bikes with us, do you have any tips for me on which site i can book bike tickets for the French trains?

By bike is really hard in France 
the best option is to look via oui.sncf mostly you only can ride on TER and few IC´s with your bike :/
