Hey,
do I have to travel every bit of my journey by train or can i fly from on city to another and then continue to use my interrail pass?
My specific plan would be to start in Munich and travel to the Toskana, I would then fly back to Munich and start the rest of my journey from there.

No you can choice on your own where and when you use the pass back in 2019 i used a flexipass
First in Romania and Austria afterwards in Norway/Sweden/Finland/Denmark
And finally in Switzerland without any problems :)
