I’m traveling from Marseille to Barcelona via Narbonne, changing trains in Narboone.
When entering these details in the Rail Planner do I need to include as 2journeys on the same day or just a one journey on that day?
Will the pass ticket for that day be useable on both legs?

Yes, the pass ticket for that day is useable on both legs.
You can enter the legs together in the Rail Planner (Marseille - Barcelona), I prefer enter and activate each leg separately (Marseille - Narbonne and Narbonne - Barcelona in your case).
