Let’s say my pass started last monday and i have a trip planned for saturday…. Could I cancel it and get the travelling day back to use it another day?

Yes, you can cancel a future travel day. Go to My Pass, select the travel day and then tap on Cancel travel day.
It's even better not to activate travel days in advance. There's no need to do that and there's always a chance you forget to cancel when your plans change. And always a chance that something unexpected happens on your planned travel day, e.g. you wake up ill, and then you can't cancel anymore because validity will have already started.
