Can I travel back and forth (Montpellier-Carcassone) using only one travel day ? If yes, how do I indicate this in the rail planner app?

Yes sure that’s possible. Log one train at a time, that’s what I always do. In the morning before boarding the TER/IC log the journey to Carcassonne and in the afternoon the other one.
