I have booked and reserved seats for a trip on 2 Jan 2024 from Paris to Amsterdam. This will be the start of our eurrail journey. On the rail planner app it doesn’t find the train we have booked. It says not available yet? So I try to add manually and it won’t let me change the date to 2 Jan 2024? How can I do this

There is the big European-wide timetable change on 10th December. Not all times have been uploaded yet on Rail Planner, just wait a bit.
Only if it isn't there on 2nd January you add it manually. You don't need to add it before anyway.
