I bought my interrail ticket when I was 27. Due to covid I was unable to make the trip before my 28. birthday. Is there any way to upgrade the ticket?

You need to make an exchange of your pass if the condition for your pass allow. You can check the condition for your pass on the invoice that you find in your Interrail/Eurail account.
The fee for an exchange is 15 EUR.
