We live in Hamburg, Germany. My wife and I bought two 4 days in 1 month global passes and were planning to use it to travel around Hungary. We used it to go to Budapest but had to cut our journey short and come back. So we used up the outbound/inbound (2 days out of 4). We would like to use the remaining 2 days for a Nordic trip.

Since the outbound and inbound are used up, can we book a rail ticket from Hamburg to a Danish border town like Padeborg and from Padeborg switch over to our global passes? Because once we are out of Germany which is our country of residence, we can start using the global pass again.

So, we get on the Hamburg to Copenhagen direct train, reserve seats all the way from Hamburg to Copenhagen, but we buy rail tickets only from Hamburg to Padeborg. At Hamburg, we show the ticket checker these rail tickets. Can they then question us about why our seats are reserved until Copenhagen? And then at Padeborg, we start a travel day and then select the same train and activate the ticket on our global passes and show this to the next ticket checker that comes along?

To be safe, we could get off at the station and take another train, but it would be more convenient to just sit on the same train.

Sure you can. Either a Flexpreis ticket to the border tariff point Flensburg(Gr) or a (Super)Sparpreis to Padborg station.
