Just looking to do about 10 cities around Europe in the summer just wondering if I had to follow the exact dates to travel to each city or can I spend an extra day than my original plan says?

You can use the pass days at any point within the validity of your pass (1 month/2 months). No need to select them in advance.
If you choose a 10-day pass, you’d have to book a train ticket for a 11th day (which can happen at any point).
