Haven't paid for our Eurail pass yet (still deciding which one is best for our trip)

However, on the app, it is not yet showing any available bookings after 10th December

When should we expect these to be available/

There is the big European-wide timetable change on 10th December. Timetables have not been yet uploaded on Rail Planner/eurail.com but the companies have mainly published them.

For Eurostar you can see availability and book through the Belgian Railways (4€ booking fee per order compared to 2€ per person per train on eurail.com) : https://www.b-europe.com/EN/Booking/Pass#TravelWish

Those trains have a passholder quota and tend to sell out days in advance, sometimes weeks around holidays so book as soon as your dates are set.
