I am wanting to travel from the UK to Switzerland and Germany.

Am I able to use the Eurostar from London to Paris or Brussles with Eurail pass.

Is this possible even if I start in the UK/London? ie is a train from the UK included even though I am British and from the UK?

Yes it is included.

on all global passes you can use a maximum of 2 of your travel days in your home country as well as other countries.

Yes totally possible.

You need a Interrail pass as you live in the UK. Seat reservations for the Eurostar cost 30€ and can sel out weeks in advance

Then you're free to travel all across Europe :)

You can check Eurostar availability here (or book a reservation): https://www.b-europe.com/EN/Booking/Pass#TravelWish

For which you need a pass cover number:

If availability for a destination is limited or not showing, you can always try different destinations. Like Brussels (if you plan to go to Amsterdam) or Lille (when going to Paris or elsewhere in France or the west of Belgium) have sometimes more availability.
