If I leave on sunday night and arrive on monday, but all the train transfers are on monday, does it count as one or two travel days?

You need a new travel day if you change trains after midnight.
You need a new travel day if you change trains after midnight.

+16This will be 2 Traveldays maybe buy a Standard ticket from your start to the first Station after midnight to cut it down to one travelday :)
