We are planning to buy a 7 day pass within 30 days. The Eurail itinerary from Venice to Milan is more than one day, Can we take local trains from Venice to Milan and then use the Eurail pass from Milan to Nice?

You can take how many trains as you want on a single day (00.00-23.59).
Venice-Milan and Milan-Ventimiglia-Nice is totally doable in a day.
And be aware of the seat reservation fees for these trains (they are available on ÖBB's website btw)
