When we were booking our interrail we accidentally included 8 days of travel instead of 7. So now we wanted to buy the trains of one of these day, to make it 7 for the pass. But how can I buy a train ticket where I have already booked the seat?

Which journey ? You can choose on which day you don't use the pass, the one with cheaper tickets obviously.

Seats for trains with mandatory reservations are generally tied to a pass (as tickets already include them). However for trains with optional reservations, only your name matters and you can use whichever ticket with it.

Seat reservations are generally non-refundable but there are exceptions.
