Currently railing round europe on a 7 day pass largely making it up as i go.  I havent used any inbound or outbound days yet and one oprion i have is i could fly back to uk from a european city after using 5 days up.  Question is if both remaining outbound and inbound days are still unused could i use them to go to somewhere in uk?  Or somewhere in europe (say a weekend in amsterdam) or would they be lost?

They aren’t separate days. You have 7 days, 2 of which you can travel in your home country if you wish. You can use all 7 days away if you like.

The official use of the 2 days in your home country is that they should be used to assist your travel abroad but the means which you do this is not specified and there is no rule that you must head directly to a airport/ferry/international train.

If you fly back to the UK, you are perfectly fine to travel for 2 days in the UK or to spend a weekend somewhere in mainland Europe.
