When will the timetable from December 16th be updated?
Maybe this week, maybe next week, maybe after that.
But it doesn't really matter. The Eurail website and especially the rail planer app is the last place to check timetables. Use national timetables; for international journeys, bahn.de is a good choice. For reservations, check:

I still think that the update is kinda late this year. The vast majority of people using Interrail/Eurail do not check the community and might just wait rather than checking elsewhere.
Yesterday I've got 2 different couples learning that their Eurostar trains over Christmas are long sold out, while they were patiently waiting on timetables to be published on Rail Planner... they are definitely not alone.
Now they had to book expensive Eurostar tickets or for the other couple flight tickets.
(I wouldn't be surprised if we get few posts of angry/confused Eurostar travellers once the timetable is finally uploaded!)
This is not good for the Eurail customer experience honestly. It wasn't that late in the previous years, we're now a month away from the timetable change... :/

You do have a point here and this will very probably happen. It also occurred previously because of the artificially short booking horizons for some of the night trains.
