I’m currently planning to travel with the interrail pass in September. I have 7 travelling days within 1 month. While planning I was wondering whether travelling out of my hometown/country already counts as the first/last travelling day?

Sure. You can use two of the 7 traveldays also in your homecountry. But this days are not extra.
