We are trying to buy a global pass and not sure if we should use it for ferry rides in Interlaken or just pay out of pocket and not waste a travel date on the pass.

Since ferry rides on Lake Thun and Brienz are totally free you have to use a pass day.
However for discounts like the train to Lauterbrunnen, Grindelwald and above (25%) you do not need to use a pass day.
When are you planning your trip ? Less boats run in winter on those lakes. After 22nd October only a daily boat runs on Lake Thun and that's it.
