I would like to reservate an Intercity Notte from Genua to Siracusa on the 24th of August, but it isnt in the Interrail/Eurail reservation options and on other websites you can only buy Tickets, so how do I get only a reservation without the whole ticket?

You can buy reservations om many places. Italian nighttrains can be bought at ÖBB, see instructions in the link below.

Except their own Nighttrains from Vienna to Livorno & Munich / Vienna to Rome/Milan/Venice. these 4 trains can be bought via oebb.at
