We've been trying to get some seat reservations on the following trains on the 15th of July : Paris Est 15:55 -> Muenchen HBF 21:36 (TGV 9577) Muenchen HBF 22:18 -> Zagreb Glavni Kol. 08:32 (EN 50463)
But it doesn't seem to work on the eurail site, reservations are always impossible, with various messages each time.
What could be the cause ? Already full ?
And I don't get how to buy only reservations on third party sites. How do we get out of this ?

The advice from the experienced travellers in the community is to use other ways to make reservations than the Interrail/Eurail website. You can look at the guide in the link:

I see youre/vous etes Francais-then you canNOT use EUrail-has to be INterRail.
If it is just a small error-go to SNCF-why even ask here? for RES on TGV.
