Das ist meine geplante Reise vom 6. - 20. August.
Ich würde den 10 Tage innerhalb von 2 Monaten Pass nehmen, falls die eine oder andere Fahrt hinzu kommt. Denkt ihr das macht Sinn und ist realistisch?

It seems fine to me.
Book night trains ASAP, they're very popular. Use tickets.oebb.at : add Interrail as a discount and select one-way tickets.
ÖBB is only able to sell the 22:45 night train from Budapest and the 13:50 night train the other way around. For other night trains check with SBB ticket counters (you can also buy your pass there, they're very helpful).
Bucharest - Istanbul is a direct train in summer (which is great !). However it is not possible to buy the Interrail fare online, see : https://www.seat61.com/trains-and-routes/bucharest-and-sofia-to-istanbul-by-train.htm
Either you pay for a (cheap) regular ticket or you contact Andy (see link). SBB ticket counters might be able to sell you that train but I'm not sure.
Sofia - Bucharest is missing in your itinerary. A 7-day pass should be enough as Bucharest - Halkali uses only one day (same for Halkali - Sofia). Regular tickets are very cheap in that part of Europe

I have looked on 8.8.2023 the train from Bucuresti North does not go directly to Halkali. Bucuresti North --> Gorna Oryahovitsa --> Dimitrovgrad --> Kapikule --> Halkali.
Yes there are usually 2 changes but in summer one carriage goes all the way to Halkali (attached to all trains). Otherwise you need to change in Gorna Oryahovitsa and Dimitrovgrad (Kapikule is only for passport checks, no need to change)
