Inbound and outbound days - travel from Edinburgh to the continent?

Hi!
I think I may be reading things too literally to see the obvious so apologies in advance to the seasoned interrailers!
I’d be very grateful for your advice.  If I start my journey from home in Edinburgh and take the train to London and then the Eurostar to Paris all in one day, does this count as my “outbound journey”?  In other words, does this still leave me with all of my “travel days”?  (I plan to buy a Global 7 day travel pass so would it still leave me with all 7?)

Also, if anyone has any ideas of alternatives to going through London that would be much appreciated. I had thought about getting the train to Newcastle and then the ferry to Amsterdam but that ferry doesn’t seem to be included in the pass and it’s ridiculously expensive.  There had been talk of a ferry from Rosyth to Dunkirk but that seems to have stalled.

Keep in mind that Inbound and outbound journeys are not extra travel days. It's just that on 2 of your travel days, you can also travel in your country of residence.
