Hi there !! planning my first Eurail/interrail journey and I'm unsure what pass to get -- I have an Irish passport, but I'm currently residing in the US and have no EU residency. I was planning on travelling on my Irish passport to avoid getting a visa but a lot of the FAQs say to purchase a pass accordance with your residency. please help! thanks!

The ID you use for official/immigration purposes has nothing to do with the rail pass and vice versa.
Obviously using your Irish passport for all entry/exit uses is the most sensible for travelling around Europe.
In order to use a rail pass you must link it to an ID.
If you have a US ID (preferably photo) then you can use that with a Eurail pass.
To use your Irish Passport you would need to use an Interrrail pass.
The main difference between the two is that the Interrail is restricted to 2 days use in your home country (Ireland, ROI and North) if that is not an issue you may prefer to just go with Interrail.
