I am purchasing global passes for my family, we are traveling in June. Can I buy them now, and then our start date is just whenever we first use them? Or do I indicate somewhere what our first travel day will be with the passes?

If you buy mobile passes, you chose the activation date later in the app.
If you buy a paper Eurail pass, you can chose to activate it at a train station in Europe or directly chose the start date (For paper interrail passes you don't get the option to activate those at a train station in Europe).
