I just tried to find a Eurostar from London to Amsterdam on November 30th and it says “no trains found” and the dates are not showing up at all as having services. Before I go and look for flights, just wondering if anyone knows whether there will be trains showing later or if there is a service disruption on that date?

November is still quite far away! There are engineering works that weekend and the updated schedule hasn't been released yet.
Check back in a few weeks. There will be plenty of Eurostar trains to Brussels anyway, where it's easy to change to the hourly reservation-free IC.
