In France would like to buy a ticket through Paris.
For example, let's say I want to go from Bordeaux to Paris and then to Lyon on the same day.
Can this be used as a one-day pass if it is on the same day?

You can travel as much as you like each pass day, there are no limits on the number of trains you can take.
Reservations will be required for the fast TGV trains on both of those routes.
