My mobile pass and my friends pass are on my phone. Can we also add them to her phone for backup? E.g. when phone battery dies, phone breaks or is lost?

It would require an internet connection to disable the pass on one phone when you activate in on the other, this is of course impractical if one is broken
You don't need to disable the pass. That will automatically be done when the pass is transferred to a new phone.
Note that you can only transfer the pass once yourself. Any further transfer has to be done through Interrail/Eurail Customer Support.
