Reservations interrail - planning trip rom the UK

Hi, can we use our 50th anniversary flash sale tickets to travel from our home town of Worcester to Paddington, stay overnight with our daughter then catch Eurostar to Paris using our pass for both rail journeys? Is this allowed in terms of the one journeys out and one journey in rules?

That is allowed but it will use both of the travel days in your country of residence. If you don't need them later, then that's fine. If you need another inbound/outbound day, then check which travel day would be cheapest and buy a normal ticket for it.
