If I purchase an Interrail 7 day pass does this include the Eurostar from London to Brussels and are seat reservations needed or are they included?

The pass does include the Eurostar and the vast majority of European trains. Seat reservations are mandatory and cost on this route 30€ pp.
Eurostar also has a passholder quota so you should book reservations as soon as your dates are set.
