Hi! I want to travel to Barcelona from the Netherlands in a few weeks, and for the last train I need a paper ticket. I can buy it through the interrail website, but I wonder how much time it will take to arrive? Does anyone have experience with ordering paper tickets through interrail?

A few weeks is more than enough time. I ordered mine last month and received it in 5 days. (delivery to the Netherlands, it is shipped from Ireland) It might take a bit longer currently because of higher demand, but 7-10 days is the maximum I reckon.
